Tildsley's Tuesday Tips: Let Your Meat Rest
When you slice meat straight off the heat, all the juices run onto the cutting board instead of staying inside. Let your steak, roast or chops rest for 5–10 minutes before cutting.
Rested meat = juicier, more tender, more flavoursome! Save this one for your next steak night!

Peekaboo! Kebabs are ready for you! Cowra Lamb + capsicum + onion = flavour bombs on a stick! Unless you’re like my dad and slide them off with a fork 😂 How do you eat yours?

Not all butchers wear a steel glove when they’re breaking down carcasses… but this butcher does🧤

Kirk’s rocking a stainless-steel chain-mesh safety glove that’s inspired by the old chainmail. Chainmail was a primary form of protection throughout Europe, the Middle East, and Asia for centuries, reaching peak usage in the Middle Ages between the 3rd century BC and the 16th century AD. A full suit of armour, including hand protection in the form of mail gloves (often worn with plate armour gauntlets for added protection), was a symbol of status and essential for survival in battle. The modern version became common in butcheries from the mid-1900s as a way to protect the “guide hand” from slips and knife nicks while boning and breaking down larger cuts.

Today we farewelled a true legend. Today was Pop’s last shift at Tildsley’s Butchery, and what a shift it was!

Pop, you’ve filled this shop with laughter, noise, cheeky one-liners, and those very Pop-style jokes that leave you turning away and having a giggle.

Your sense of humour, your presence, your stories, and your larger-than-life personality have been such a big part of our days here and it won’t be the same without you.

Thank you for the laughs, the banter, the memories, and for being unapologetically you! We wish you the happiest, most well-earned retirement, full of rest, fun, and whatever makes you smile.

You’ll be missed more than you know… and don’t think for a second you’re getting away without coming back in to visit!! This place will always have a spot for you.
